Dijon Chicken with Mushrooms

Ingredients

  • ¾ lb boneless, skinless chicken breasts, halved lengthwise
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 1½ Tbsp olive oil
  • 1 (8-oz) pkg sliced mushrooms
  • 1 clove garlic, minced
  • 2 Tbsp low-sodium chicken broth
  • ¼ cup heavy cream
  • 1 Tbsp Dijon mustard

Instructions

  1. Sprinkle chicken with ¼ tsp salt and ¼ tsp pepper. Cook chicken in hot oil in a skillet over medium-high heat 2 to 3 minutes per side or until browned; remove from heat.
  2. Add mushrooms to drippings in skillet; sauté 6 minutes or until browned and tender. Stir in garlic, and cook 1 minute.
  3. Whisk together broth, cream, mustard, and ¼ tsp each salt and pepper. Return chicken to skillet; add broth mixture. Cook 5 minutes or until chicken is done and sauce is thickened.

  • ½ cup chopped onion
  • 1 Tbsp olive oil
  • 1½ cups frozen green peas, thawed
  • ¼ cup low-sodium chicken broth
  • 1 Tbsp chopped fresh basil
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Sauté onion in hot oil in a saucepan over medium-high heat 5 minutes or until tender.
  2. Add peas, broth, basil, salt, and pepper; cook 5 minutes or until thoroughly heated.
