Cajun Pork Medallions
Spicy Roasted OkraIngredients
- ¾ lb pork tenderloin, trimmed and cut into ½-inch-thick slices
- 1 tsp Cajun or Creole seasoning
- 1½ Tbsp olive oil, divided
- 1 cup sliced mushrooms
- ½ cup chopped onion
- ½ cup chopped bell pepper (any color)
- ½ cup chopped celery
- 1 (14.5-oz) can petite diced tomatoes
- ¼ cup low-sodium chicken broth
- 1 tsp cornstarch
- 2 tsp water
- 2 Tbsp chopped fresh flat-leaf parsley
Instructions
- Sprinkle pork with Cajun seasoning. Cook in 1 Tbsp hot oil in a deep nonstick skillet over medium-high heat 2 minutes per side or until browned; remove from skillet.
- Heat ½ Tbsp oil in skillet; add mushrooms, onion, bell pepper, and celery. Sauté 6 minutes or until vegetables are tender; add tomatoes and broth.
- Return pork to skillet; cover, reduce heat, and simmer 5 minutes or until pork is done.
- Combine cornstarch and water; add to skillet.
- Cook 3 minutes or until sauce is slightly thickened. Sprinkle with parsley just before serving.

- ¾ lb okra
- 1 Tbsp olive oil
- ¼ tsp salt
- ⅛ tsp cayenne pepper
Side Dish Instructions
- Preheat oven to 450°F. Toss okra with oil on a large rimmed baking sheet. Bake 8 to 10 minutes or until browned and tender. Sprinkle with salt and cayenne pepper; toss.
