Pulled Pork Macaroni and Cheese

Ingredients

  • 1 (16-oz) pkg small shell pasta
  • 3 Tbsp butter
  • 3 Tbsp all-purpose flour
  • 3 cups milk
  • 2 Tbsp Dijon mustard
  • 1 (8-oz) block Cheddar cheese, shredded
  • 1 (16-oz) pkg sauceless pulled pork
  • 1 cup shredded mozzarella cheese
  • 3 green onions, minced

Instructions

  1. Preheat oven to 350°F. Cook pasta according to package directions; drain and keep warm.
  2. Meanwhile, melt butter in a large Dutch oven over medium heat; add flour, and cook, stirring, 2 minutes. Gradually stir in milk and mustard; cook, stirring often, until mixture is thickened and bubbly.
  3. Gradually stir in Cheddar cheese, half of pork, and pasta. Spoon into a lightly greased 13- x 9-inch baking dish. Top with remaining pork and mozzarella. Bake 15 minutes or until cheese is melted. Sprinkle with onions.

  • 1 (6-oz) pkg arugula-baby spinach mix
  • 3 apples (preferably sweet, crisp), chopped
  • ½ cup Italian dressing
