Pulled Pork Macaroni and Cheese
Apple, Spinach, and Arugula SaladIngredients
- 1 (16-oz) pkg small shell pasta
- 3 Tbsp butter
- 3 Tbsp all-purpose flour
- 3 cups milk
- 2 Tbsp Dijon mustard
- 1 (8-oz) block Cheddar cheese, shredded
- 1 (16-oz) pkg sauceless pulled pork
- 1 cup shredded mozzarella cheese
- 3 green onions, minced
Instructions
- Preheat oven to 350°F. Cook pasta according to package directions; drain and keep warm.
- Meanwhile, melt butter in a large Dutch oven over medium heat; add flour, and cook, stirring, 2 minutes. Gradually stir in milk and mustard; cook, stirring often, until mixture is thickened and bubbly.
- Gradually stir in Cheddar cheese, half of pork, and pasta. Spoon into a lightly greased 13- x 9-inch baking dish. Top with remaining pork and mozzarella. Bake 15 minutes or until cheese is melted. Sprinkle with onions.

- 1 (6-oz) pkg arugula-baby spinach mix
- 3 apples (preferably sweet, crisp), chopped
- ½ cup Italian dressing
