Grilled Grouper with Cajun Rémoulade
Warm Okra, Corn, and Pepper SaladIngredients
- 2 (6-oz) grouper fillets (or other firm, white fish)
- 2 tsp olive oil
- ⅛ tsp salt
- ⅛ tsp pepper
- ¼ cup roasted garlic mayonnaise (such as Hellman's)
- 1½ tsp Dijon mustard
- 1½ tsp fresh lemon juice
- 1 tsp capers, minced
- ⅛ tsp paprika
- 4 Bibb lettuce leaves
- ½ tomato, thinly sliced
Instructions
- Preheat grill to medium-high heat. Brush fish with oil; sprinkle with salt and pepper. Grill fish, covered, 4 minutes per side or until fish flakes with a fork.
- Stir together mayonnaise, mustard, lemon juice, capers, and paprika. Serve fish on lettuce with tomato and mayonnaise mixture.
Side Dish Ingredients
- 1 small ear corn, shucked
- 1 small red bell pepper, halved and seeded
- ½ lb okra
- 1 Tbsp olive oil
- 1 green onion, chopped
- 1 Tbsp red wine vinegar
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Preheat grill or grill pan to medium-high heat. Toss vegetables with oil. Thread okra onto double skewers (two skewers side by side). Grill vegetables, covered, 5 to 6 minutes or until charred, turning occasionally.
- Cut kernels from cobs into a bowl; discard cobs. Remove okra from skewers. Coarsely chop bell pepper.
- Add okra, bell pepper, and onion to corn. Drizzle with vinegar; season with salt and pepper.
