White Barbecue Sauce Chicken Sandwiches
Lemony Potato SaladIngredients
- 1 (36-oz) pkg frozen breaded chicken tenderloins
- 1 cup mayonnaise
- ½ cup apple cider vinegar
- 1½ tsp fresh lemon juice
- 2 tsp pepper
- ¼ tsp smoked paprika
- 1 (8-count) pkg hamburger buns
- 1 (8-oz) pkg shredded lettuce
- 2 tomatoes, sliced
Instructions
- Bake chicken tenderloins according to package directions.
- Meanwhile, stir together mayonnaise, vinegar, lemon juice, pepper, and smoked paprika. Season with salt to taste.
- Serve chicken on buns with lettuce, tomatoes, and mayonnaise mixture.

- 2 lb red potatoes, cubed
- 3 Tbsp olive oil
- 3 Tbsp fresh lemon juice
- ½ tsp dry mustard
- 4 green onions, diced
- 2 Tbsp chopped fresh parsley

- Bring potatoes and water to cover to a boil in a large saucepan; reduce heat, and simmer 10 to 15 minutes or until potatoes are just tender. Drain.
- Whisk together oil, lemon juice, and mustard in a large bowl. Add warm potatoes, onions, and parsley; toss. Season with salt and pepper to taste.
