Ingredients

  • 1 (36-oz) pkg frozen breaded chicken tenderloins
  • 1 cup mayonnaise
  • ½ cup apple cider vinegar
  • 1½ tsp fresh lemon juice
  • 2 tsp pepper
  • ¼ tsp smoked paprika
  • 1 (8-count) pkg hamburger buns
  • 1 (8-oz) pkg shredded lettuce
  • 2 tomatoes, sliced

Instructions

  1. Bake chicken tenderloins according to package directions.
  2. Meanwhile, stir together mayonnaise, vinegar, lemon juice, pepper, and smoked paprika. Season with salt to taste.
  3. Serve chicken on buns with lettuce, tomatoes, and mayonnaise mixture.

Side Dish Ingredients

  • 2 lb red potatoes, cubed
  • 3 Tbsp olive oil
  • 3 Tbsp fresh lemon juice
  • ½ tsp dry mustard
  • 4 green onions, diced
  • 2 Tbsp chopped fresh parsley

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a large saucepan; reduce heat, and simmer 10 to 15 minutes or until potatoes are just tender. Drain.
  2. Whisk together oil, lemon juice, and mustard in a large bowl. Add warm potatoes, onions, and parsley; toss. Season with salt and pepper to taste.
