Savory Sausage Bread Pudding

Ingredients

  • 1 lb lean ground pork sausage, casings removed
  • 1 yellow onion, chopped
  • 1 (8-oz) pkg sliced mushrooms
  • 2 cloves garlic, minced
  • 1 (12-oz) loaf sandwich bread (preferably whole-grain), cut into 1-inch cubes
  • 1 (8-oz) block sharp Cheddar cheese, shredded
  • 6 large eggs
  • 2 cups milk
  • ½ tsp pepper

Instructions

  1. Brown sausage in a large nonstick skillet over medium heat; drain, reserving 1 Tbsp drippings in skillet.
  2. Add onion, mushrooms, and garlic; sauté 8 minutes or until tender.
  3. Combine sausage, sautéed vegetables, bread, and cheese; whisk together eggs, milk, and pepper.
  4. Spoon sausage mixture into a 13-x 9-inch baking dish coated with cooking spray; pour egg mixture over sausage, pressing gently. Chill overnight.
  5. Preheat oven to 350°F. Bake 1 hour or until browned and puffy.

  • 2 cups sliced organic strawberries
  • 2 cups blueberries
  • 2 organic peaches, peeled, pitted and sliced
  • 2 kiwifruit, peeled and sliced

  1. Combine all ingredients in a bowl.
