Cheesy Smothered Chicken

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • 2 Tbsp butter
  • 4 slices bacon, halved
  • 1 onion, sliced
  • 1 (8-oz) pkg sliced mushrooms
  • 4 (1-oz) slices whole-milk mozzarella cheese
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken in melted butter in a large nonstick skillet over medium heat 5 to 6 minutes per side or until done. Remove from skillet; keep warm.
  2. Cook bacon in same skillet over medium heat until crisp; drain, reserving drippings in skillet.
  3. Sauté onion and mushrooms in drippings over medium heat until onion is tender. Return chicken to skillet.
  4. Top with bacon, mushroom mixture, and mozzarella. Remove from heat; cover and let stand 2 to 3 minutes or until cheese is melted. Sprinkle with Parmesan.

  • 1½ tsp minced garlic
  • 2 Tbsp olive oil
  • ¼ tsp kosher salt

Side Dish Instructions

  1. Sauté green beans and garlic in hot oil in a large skillet over medium heat 5 to 7 minutes or until just tender, stirring often. Sprinkle with salt and desired amount of pepper.
