Grilled Steak with Chimichurri Sauce

- 2 tsp minced garlic, divided
- 1 tsp kosher salt, divided
- ½ tsp black pepper
- 1½ lb boneless top sirloin steak
- ¾ cup packed fresh flat-leaf parsley
- ¼ cup fresh cilantro leaves
- ⅓ cup olive oil
- 3 Tbsp fresh lemon juice
- ¼ tsp crushed red pepper (optional)
Instructions
- Rub ½ tsp garlic, ½ tsp salt, and pepper on both sides of steak. Chill at least 30 minutes.
- Heat a grill pan or large nonstick skillet over medium-high heat; cook steak 5 to 8 minutes per side or to desired doneness. Let stand 5 minutes; thinly slice across the grain.
- Pulse parsley and cilantro in a food processor until finely chopped. Add 1½ tsp garlic, ½ tsp salt, oil, lemon juice, and red pepper; process until blended but not puréed.
- Serve chimichurri sauce over steak.

- ½ cup mayonnaise
- 1 Tbsp fresh lime juice
- 1 Tbsp apple cider vinegar
- 1 tsp smoked paprika
- ½ tsp garlic salt
- 3 cups shredded cabbage
- ⅓ cup chopped green onions
- ¼ cup roasted, salted pepitas (pumpkin seeds)
Side Dish Instructions
- Whisk together mayonnaise, lime juice, vinegar, paprika, and garlic salt in a large bowl. Add cabbage and onions; toss.
- Chill until ready to serve; sprinkle with pepitas before serving.
