Grilled Steak with Chimichurri Sauce

Ingredients

  • 2 tsp minced garlic, divided
  • 1 tsp kosher salt, divided
  • ½ tsp black pepper
  • 1½ lb boneless top sirloin steak
  • ¾ cup packed fresh flat-leaf parsley
  • ¼ cup fresh cilantro leaves
  • ⅓ cup olive oil
  • 3 Tbsp fresh lemon juice
  • ¼ tsp crushed red pepper (optional)

Instructions

  1. Rub ½ tsp garlic, ½ tsp salt, and pepper on both sides of steak. Chill at least 30 minutes.
  2. Heat a grill pan or large nonstick skillet over medium-high heat; cook steak 5 to 8 minutes per side or to desired doneness. Let stand 5 minutes; thinly slice across the grain.
  3. Pulse parsley and cilantro in a food processor until finely chopped. Add 1½ tsp garlic, ½ tsp salt, oil, lemon juice, and red pepper; process until blended but not puréed.
  4. Serve chimichurri sauce over steak.

  • ½ cup mayonnaise
  • 1 Tbsp fresh lime juice
  • 1 Tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • ½ tsp garlic salt
  • 3 cups shredded cabbage
  • ⅓ cup chopped green onions
  • ¼ cup roasted, salted pepitas (pumpkin seeds)

Side Dish Instructions

  1. Whisk together mayonnaise, lime juice, vinegar, paprika, and garlic salt in a large bowl. Add cabbage and onions; toss.
  2. Chill until ready to serve; sprinkle with pepitas before serving.
