Reuben in a Bowl

Ingredients

  • 1 (16-oz) pkg coleslaw, or 1 head cabbage, chopped
  • 1 lb pastrami or corned beef
  • 4 to 5 slices Swiss cheese
  • 1 cup mayonnaise
  • ¼ cup sugar-free ketchup
  • 1 Tbsp dill pickle juice
  • 1 to 2 baby dill pickles, finely chopped
  • Salt
  • Ground black pepper

Instructions

  1. Place the coleslaw in a large salad bowl.
  2. Cut the pastrami and Swiss cheese into bite-sized pieces and add to the bowl with the coleslaw.
  3. For the dressing, place the mayonnaise, ketchup, pickle juice, and chopped pickles in a small bowl. Mix well until the dressing is well combined. Pour the dressing over the coleslaw mixture and toss to coat. Season with salt and pepper.
  4. Serve immediately, or place in the refrigerator to chill until you are ready to eat. Store leftover salad and dressing in separate containers in the refrigerator for up to 4 days.
