Reuben in a Bowl
Ingredients
- 1 (16-oz) pkg coleslaw, or 1 head cabbage, chopped
- 1 lb pastrami or corned beef
- 4 to 5 slices Swiss cheese
- 1 cup mayonnaise
- ¼ cup sugar-free ketchup
- 1 Tbsp dill pickle juice
- 1 to 2 baby dill pickles, finely chopped
- Salt
- Ground black pepper
Instructions
- Place the coleslaw in a large salad bowl.
- Cut the pastrami and Swiss cheese into bite-sized pieces and add to the bowl with the coleslaw.
- For the dressing, place the mayonnaise, ketchup, pickle juice, and chopped pickles in a small bowl. Mix well until the dressing is well combined. Pour the dressing over the coleslaw mixture and toss to coat. Season with salt and pepper.
- Serve immediately, or place in the refrigerator to chill until you are ready to eat. Store leftover salad and dressing in separate containers in the refrigerator for up to 4 days.
