Shrimp Caesar Wraps

Ingredients

  • 1½ lb peeled medium-size raw shrimp
  • 2 Tbsp olive oil
  • 6 cups sliced romaine lettuce
  • 1 cup halved grape tomatoes
  • ¾ cup shredded fresh Parmesan cheese
  • ¾ cup Caesar dressing
  • 9 (8-inch) low-carb, low-fat flour tortillas

Instructions

  1. Sauté shrimp in hot oil in a large skillet over medium heat 3 minutes or just until pink. Toss with romaine, tomatoes, cheese, and dressing.
  2. Warm tortillas according to package directions. Divide shrimp mixture among tortillas; roll up.
  3. Cut each wrap diagonally in half. Serve 3 halves per serving.

  • 1 (16-oz) pkg sugar snap peas, trimmed
  • 2 Tbsp butter
  • ¼ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Steam peas in a steamer basket over simmering water 3 minutes or until crisp-tender. Place in a bowl; toss with butter, salt, and pepper.
