Creamy Pasta Salad with Tuna and White Beans

Ingredients

  • 4 oz whole wheat penne pasta
  • ¼ cup reduced-fat olive oil mayonnaise
  • ¼ cup reduced-fat sour cream
  • 1 Tbsp fresh lemon juice
  • 2 Tbsp chopped fresh parsley
  • ¼ tsp salt
  • ¼ tsp pepper
  • 3 (5-oz) cans wild-caught tuna in water, drained and flaked
  • 1 (15-oz) can cannellini beans, drained and rinsed
  • 1 pint grape tomatoes, halved
  • 2 stalks celery, chopped

Instructions

  1. Cook pasta according to package directions; drain and rinse with cold water.
  2. Whisk together mayonnaise, sour cream, lemon juice, parsley, salt, and pepper.
  3. Add tuna, beans, tomatoes, and celery to pasta. Pour dressing over pasta, and toss. Cover and chill until ready to serve.
