Avocado BLT Burgers
Zucchini FriesIngredients
- 6 slices nitrate-free bacon
- 1½ lb 90% lean ground beef
- ¼ tsp salt
- ¼ tsp pepper
- 6 Tbsp olive-oil mayonnaise
- 2 Tbsp chopped fresh basil
- 1 tsp lemon zest
- 1 tsp fresh lemon juice
- 2 cloves garlic, minced
- 6 hamburger buns (preferably whole wheat)
- 1 head Bibb or Boston lettuce, separated into leaves
- 1 large organic tomato, cut into 6 slices
- 2 avocados, sliced
Instructions
- Cook bacon in a large skillet over medium heat until crisp; drain.
- Meanwhile, shape beef into 6 patties; sprinkle with salt and pepper.
- Preheat grill to medium-high heat or place a grill pan over medium-high heat; grill burgers 4 to 5 minutes per side or until no longer pink.
- Stir together mayonnaise, basil, lemon zest, lemon juice, and garlic; spread on buns.
- Serve burgers on buns with bacon, lettuce, tomato, and avocado.

- 2 large eggs
- 3 Tbsp water
- 3 zucchini, cut into 3-inch sticks
- 1 cup whole wheat flour
- 1¼ cups panko breadcrumbs (preferably whole wheat)
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Whisk together eggs and water in a shallow bowl.
- Dredge zucchini in flour, and dip in beaten egg; dredge in breadcrumbs, pressing gently to adhere. Place zucchini on a greased baking sheet.
- Bake 25 minutes or until browned and crisp. Sprinkle with salt and pepper while hot.
