Avocado BLT Burgers

Ingredients

  • 6 slices nitrate-free bacon
  • 1½ lb 90% lean ground beef
  • ¼ tsp salt
  • ¼ tsp pepper
  • 6 Tbsp olive-oil mayonnaise
  • 2 Tbsp chopped fresh basil
  • 1 tsp lemon zest
  • 1 tsp fresh lemon juice
  • 2 cloves garlic, minced
  • 6 hamburger buns (preferably whole wheat)
  • 1 head Bibb or Boston lettuce, separated into leaves
  • 1 large organic tomato, cut into 6 slices
  • 2 avocados, sliced

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain.
  2. Meanwhile, shape beef into 6 patties; sprinkle with salt and pepper.
  3. Preheat grill to medium-high heat or place a grill pan over medium-high heat; grill burgers 4 to 5 minutes per side or until no longer pink.
  4. Stir together mayonnaise, basil, lemon zest, lemon juice, and garlic; spread on buns.
  5. Serve burgers on buns with bacon, lettuce, tomato, and avocado.

  • 2 large eggs
  • 3 Tbsp water
  • 3 zucchini, cut into 3-inch sticks
  • 1 cup whole wheat flour
  • 1¼ cups panko breadcrumbs (preferably whole wheat)
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Whisk together eggs and water in a shallow bowl.
  2. Dredge zucchini in flour, and dip in beaten egg; dredge in breadcrumbs, pressing gently to adhere. Place zucchini on a greased baking sheet.
  3. Bake 25 minutes or until browned and crisp. Sprinkle with salt and pepper while hot.
