Pork Chops with Peaches and Blackberries
Avocado-Tomato SaladIngredients
- 2 Tbsp balsamic vinegar
- 2 Tbsp fresh lime juice
- 2 Tbsp raw honey
- 1 Tbsp chopped fresh thyme
- 6 (10-oz) bone-in pork chops (about 1½ inches thick)
- 6 peaches, quartered
- 2 Tbsp avocado oil
- 1 (4.4-oz) pkg blackberries
Instructions
- Preheat grill or grill pan to medium-high heat. Combine vinegar, lime juice, honey, and thyme; brush onto pork.
- Sprinkle pork lightly with salt and pepper. Brush peaches with oil.
- Grill pork on a grill rack rubbed with oil, covered, 6 to 8 minutes per side or until done. Grill peaches, cut sides down, 2 minutes per side or until tender.
- Toss together peaches, blackberries, and salt and pepper to taste. Serve with pork.
Side Dish Ingredients
- 2 beefsteak tomatoes, seeded and diced
- 2 avocados, diced
- ½ small red onion, thinly sliced
- 2 Tbsp extra virgin olive oil
- 1½ Tbsp fresh lime juice
Side Dish Instructions
- Combine all ingredients and salt and pepper to taste in a bowl. Let stand 5 minutes before serving.
