Turkey Biryani
Ingredients
- 1½ lb ground turkey
- 2 Tbsp curry powder, divided
- 1 (10 oz) pkg frozen peas
- ¼ cup light butter with canola oil
- 4 cloves garlic, minced
- 1 tsp grated ginger
- 1½ cups basmati rice
- 3 cups low-sodium chicken broth
- ½ tsp salt
- ½ tsp pepper
- 1 cup chopped cashews
Instructions
- Coat a Dutch oven with cooking spray and place over medium-high heat; add turkey and 1 Tbsp curry powder.
- Cook turkey 5 minutes or until browned; remove from pan, and stir in peas.
- Heat the light butter in Dutch oven; add remaining 1 Tbsp curry powder, garlic, ginger, rice, broth, and salt and pepper.
- Bring to a boil; cover, reduce heat and simmer 12 minutes or until liquid is absorbed and rice is tender.
- Stir in turkey mixture and cashews.
