Turkey Biryani

Ingredients

  • 1½ lb ground turkey
  • 2 Tbsp curry powder, divided
  • 1 (10 oz) pkg frozen peas
  • ¼ cup light butter with canola oil
  • 4 cloves garlic, minced
  • 1 tsp grated ginger
  • 1½ cups basmati rice
  • 3 cups low-sodium chicken broth
  • ½ tsp salt
  • ½ tsp pepper 
  • 1 cup chopped cashews

Instructions

  1. Coat a Dutch oven with cooking spray and place over medium-high heat; add turkey and 1 Tbsp curry powder.
  2. Cook turkey 5 minutes or until browned; remove from pan, and stir in peas.
  3. Heat the light butter in Dutch oven; add remaining 1 Tbsp curry powder, garlic, ginger, rice, broth, and salt and pepper.
  4. Bring to a boil; cover, reduce heat and simmer 12 minutes or until liquid is absorbed and rice is tender.
  5. Stir in turkey mixture and cashews.
