Wasabi Chicken Rice Bowls
Ingredients
- 2 (8.8-oz) pouches microwavable brown rice
- 1 cup frozen shelled edamame
- 3 cups diced rotisserie chicken
- 2 limes
- ½ cup olive-oil mayonnaise
- 1 tsp wasabi paste
- ½ tsp salt
- 2 cups shredded red cabbage
- 1 English cucumber, chopped
Instructions
- Cook brown rice and edamame according to package directions. Reheat chicken in microwave 1 to 2 minutes or until thoroughly heated.
- Grate zest and squeeze juice from limes. Whisk together lime zest, lime juice, mayonnaise, wasabi paste, and salt.
- Divide brown rice among bowls; top with cabbage, cucumber, edamame, and chicken. Drizzle with wasabi mayonnaise before serving.
