Indonesian Noodle Stir-Fry

Ingredients

  • 2 small cloves garlic, chopped
  • 1½ cups tricolor coleslaw
  • 2 Tbsp sesame oil, divided
  • 1 (14.2-oz) pkg instant udon stir-fry noodles (such as Ka-Me)
  • 3 Tbsp low-sodium soy sauce
  • 1 Tbsp honey
  • 2 green onions, cut into 2-inch pieces
  • 3 large eggs

Instructions

  1. Sauté garlic and coleslaw in 1 Tbsp hot oil in a large skillet over medium-high heat 5 minutes or until garlic is fragrant and cabbage is tender.
  2. Fold noodles into slaw, and sauté 3 minutes or until noodles start to brown.
  3. Stir together soy sauce, honey, and onions in a small bowl. Stir into fried noodles, and cook 2 minutes. Divide among 3 plates; cover to keep warm.
  4. Return skillet to medium-high heat. Cook eggs in 1 Tbsp hot oil until whites are set and yolks are cooked to desired doneness. Serve noodles topped with a sunny-side up egg.
