Surf and Turf Kabobs
Pepper-Jack Cauliflower MashIngredients
- 1½ lb sirloin steak, cubed
- 2 Tbsp Worcestershire sauce
- 3 red bell peppers, cut into 1½-inch pieces
- 1½ lb peeled and deveined, large raw shrimp
- 2 Tbsp olive oil
- ½ tsp garlic salt
- ½ tsp black pepper
- 3 Tbsp chopped fresh parsley
Instructions
- Preheat grill or grill pan to medium-high heat. Toss together beef and Worcestershire sauce in a large bowl.
- Thread beef, bell pepper, and shrimp alternately onto metal or bamboo skewers. Brush with oil; sprinkle with garlic salt and black pepper.
- Grill, covered, 4 minutes per side or until beef is desired doneness. Sprinkle with parsley.
Side Dish Ingredients
- 2 (12-oz) pkg frozen mashed cauliflower (such as Birds Eye)
- ½ cup shredded pepper-Jack cheese
- ½ tsp crushed red pepper
Side Dish Instructions
- Cook cauliflower according to package directions. Transfer to a bowl. Stir in cheese and red pepper.
