Pepper-Jack Cauliflower Mash

Ingredients

  • 1½ lb sirloin steak, cubed
  • 2 Tbsp Worcestershire sauce
  • 3 red bell peppers, cut into 1½-inch pieces
  • 1½ lb peeled and deveined, large raw shrimp
  • 2 Tbsp olive oil
  • ½ tsp garlic salt
  • ½ tsp black pepper
  • 3 Tbsp chopped fresh parsley

Instructions

  1. Preheat grill or grill pan to medium-high heat. Toss together beef and Worcestershire sauce in a large bowl.
  2. Thread beef, bell pepper, and shrimp alternately onto metal or bamboo skewers. Brush with oil; sprinkle with garlic salt and black pepper.
  3. Grill, covered, 4 minutes per side or until beef is desired doneness. Sprinkle with parsley.

Side Dish Ingredients

  • 2 (12-oz) pkg frozen mashed cauliflower (such as Birds Eye)
  • ½ cup shredded pepper-Jack cheese
  • ½ tsp crushed red pepper 

Side Dish Instructions

  1. Cook cauliflower according to package directions. Transfer to a bowl. Stir in cheese and red pepper.
