Shrimp Tacos
Ingredients
- 1½ lb peeled and deveined, large raw shrimp
- 2 Tbsp lime juice, divided
- ¼ tsp salt
- ¼ tsp pepper
- 2 Tbsp olive oil
- ½ cup plain Greek yogurt
- ¼ cup chopped fresh cilantro
- 2 cloves garlic, minced
- 12 soft taco-size flour tortillas
- 2 avocados, sliced
Instructions
- Toss shrimp with 1 Tbsp lime juice, salt, and pepper. Cook shrimp in hot oil in a large skillet over medium-high heat 2 to 3 minutes per side or until shrimp turn pink.
- Meanwhile, stir together yogurt, cilantro, 1 Tbsp lime juice, and garlic.
- Divide shrimp among tortillas; top with cilantro-lime sauce and avocado.
