Shrimp Tacos

Ingredients

  • 1½ lb peeled and deveined, large raw shrimp
  • 2 Tbsp lime juice, divided
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 Tbsp olive oil
  • ½ cup plain Greek yogurt
  • ¼ cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 12 soft taco-size flour tortillas
  • 2 avocados, sliced

Instructions

  1. Toss shrimp with 1 Tbsp lime juice, salt, and pepper. Cook shrimp in hot oil in a large skillet over medium-high heat 2 to 3 minutes per side or until shrimp turn pink.
  2. Meanwhile, stir together yogurt, cilantro, 1 Tbsp lime juice, and garlic.
  3. Divide shrimp among tortillas; top with cilantro-lime sauce and avocado.
