Bread Loaf Pizzas
Romaine Salad with Balsamic VinaigretteIngredients
- 1 clove garlic, minced
- 1 Tbsp olive oil, divided
- 1 (14.5-oz) can BPA-free unsalted diced tomatoes, undrained
- 1 (4-oz) hoagie roll (preferably whole wheat), halved lengthwise
- ½ organic green bell pepper, sliced
- ½ (8-oz) pkg sliced mushrooms
- 1 oz uncured, sliced natural pepperoni
- ½ cup shredded part-skim mozzarella cheese
Instructions
- Preheat oven to 400°F. Sauté garlic in ½ Tbsp hot oil in a saucepan over medium heat 2 minutes or until tender. Add tomatoes; cook 10 to 15 minutes, stirring occasionally, until sauce is thickened.
- Brush ½ Tbsp oil on cut sides of bread; place on a baking sheet. Bake 5 minutes or until toasted.
- Top bread with desired amount of tomato sauce; top with bell pepper, mushrooms, pepperoni, and cheese.
- Bake 10 to 12 minutes or until cheese is melted. Cut into serving-size pieces.
Side Dish Ingredients
- 3 cups chopped romaine lettuce
- ½ cup sliced organic cucumber
- 1 organic tomato, chopped
- 2 tsp balsamic vinegar
- ½ tsp whole-grain Dijon mustard
- 2 Tbsp olive oil
Side Dish Instructions
- Combine lettuce, cucumber, and tomato in a bowl.
- Whisk together vinegar and mustard; slowly add oil, whisking until blended. Drizzle over salad.
