Chicken with Zucchini and Summer Squash

Ingredients

  • 1 Tbsp butter, divided
  • ¾ lb boneless, skinless chicken thighs
  • ¼ tsp dried thyme (or use dried rosemary)
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 2 cloves garlic, minced
  • Fresh basil leaves

Instructions

  1. Melt ½ Tbsp butter in a large skillet over medium-high heat. Sprinkle chicken with thyme and ⅛ tsp each salt and pepper. Cook chicken in melted butter 5 to 6 minutes per side or until done.
  2. Meanwhile, melt ½ Tbsp butter in a large skillet over medium-high heat. Add zucchini, squash, garlic, and ⅛ tsp each salt and pepper. Sauté 8 to 10 minutes or until vegetables are browned and tender. Serve chicken and vegetables over Orzo with Spinach recipe. Garnish with basil.

  • ⅔ cup orzo (preferably whole wheat)
  • 1 cup baby spinach
  • 2 tsp olive oil
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Cook orzo according to package directions.
  2. Transfer orzo to a bowl; toss with spinach, oil, salt, and pepper.
