Barbecue Chicken Grilled Cheese Sandwiches

Ingredients

  • 1 (22-oz) pkg frozen grilled and ready chicken breast strips
  • ½ cup barbecue sauce
  • ¼ cup mayonnaise
  • 1 Tbsp Dijon mustard
  • 1 tsp honey
  • 12 slices Texas toast
  • 1 (8-oz) pkg sliced mozzarella cheese
  • 2 tomatoes, sliced
  • 1 cup dill pickle chips
  • ¼ cup butter, softened

Instructions

  1. Preheat oven to 425°F. Thaw chicken and reheat according to package directions; drain, if needed.
  2. Stir together barbecue sauce, mayonnaise, mustard, and honey. Spread mixture over 1 side of each toast. Top half of slices with 1 slice cheese, tomato slices, pickles, and chicken. Cover with remaining toast, sauce side down.
  3. Spread butter on outsides of sandwiches; place sandwiches on a baking sheet. Bake 20 minutes or until bread is toasted and cheese is melted.
