Pumpkin-Sage Pasta

Ingredients

  • 12 oz penne pasta
  • 1 onion, chopped
  • 2 Tbsp olive oil
  • 1 (15-oz) can pumpkin puree
  • 1¼ cups freshly grated Parmesan cheese
  • ¾ cup heavy cream
  • ¾ tsp dried sage
  • ¾ tsp salt
  • 1 (5-oz) pkg baby spinach

Instructions

  1. Cook pasta according to package direction, reserving ¾ cup pasta water. Drain.
  2. Meanwhile, cook onion in hot oil in a large skillet over medium-high heat 5 minutes or until lightly browned.
  3. Stir in pumpkin, cheese, cream, sage, and salt; cook 4 to 5 minutes or to desired thickness, adding reserved pasta water as needed.
  4. Add pasta and spinach; cook 2 to 3 minutes or until spinach wilts.
