Pumpkin-Sage Pasta
Ingredients
- 12 oz penne pasta
- 1 onion, chopped
- 2 Tbsp olive oil
- 1 (15-oz) can pumpkin puree
- 1¼ cups freshly grated Parmesan cheese
- ¾ cup heavy cream
- ¾ tsp dried sage
- ¾ tsp salt
- 1 (5-oz) pkg baby spinach
Instructions
- Cook pasta according to package direction, reserving ¾ cup pasta water. Drain.
- Meanwhile, cook onion in hot oil in a large skillet over medium-high heat 5 minutes or until lightly browned.
- Stir in pumpkin, cheese, cream, sage, and salt; cook 4 to 5 minutes or to desired thickness, adding reserved pasta water as needed.
- Add pasta and spinach; cook 2 to 3 minutes or until spinach wilts.
