Onion-Smothered Pork Loin

Ingredients

  • 1½ lb pork loin, trimmed
  • ¾ tsp kosher salt, divided
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 2 Tbsp butter
  • 2 onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 (14.5-oz) can low-sodium beef broth
  • ½ cup heavy cream
  • 2 Tbsp whole-grain mustard
  • 2 tsp chopped fresh rosemary

Instructions

  1. Preheat oven to 400°F. Sprinkle pork with ½ tsp each salt and pepper.
  2. Heat oil in a large skillet over medium-high heat; add pork, and cook 5 minutes per side. Transfer pork to an 11- x 7-inch baking dish coated with cooking spray.
  3. Melt butter in skillet over medium heat; add onion and garlic. Cook 10 minutes, stirring, until tender. Stir in broth, cream, mustard, rosemary, and ¼ tsp salt. Bring to a boil; reduce heat, and simmer 10 minutes.
  4. Pour sauce over pork; bake 20 to 25 minutes or until a meat thermometer inserted in pork reads 145°F. Let stand 3 minutes before slicing.

  • 1 (16-oz) pkg frozen green beans
  • 2 Tbsp butter, melted
  • 1 Tbsp Dijon mustard
  • ¼ tsp salt

Side Dish Instructions

  1. Microwave green beans according to package directions.
  2. Combine butter and mustard in a bowl. Add green beans; toss. Sprinkle with salt.
