Onion-Smothered Pork Loin
Dijon Green BeansIngredients
- 1½ lb pork loin, trimmed
- ¾ tsp kosher salt, divided
- ½ tsp pepper
- 2 Tbsp olive oil
- 2 Tbsp butter
- 2 onions, thinly sliced
- 2 cloves garlic, minced
- 1 (14.5-oz) can low-sodium beef broth
- ½ cup heavy cream
- 2 Tbsp whole-grain mustard
- 2 tsp chopped fresh rosemary
Instructions
- Preheat oven to 400°F. Sprinkle pork with ½ tsp each salt and pepper.
- Heat oil in a large skillet over medium-high heat; add pork, and cook 5 minutes per side. Transfer pork to an 11- x 7-inch baking dish coated with cooking spray.
- Melt butter in skillet over medium heat; add onion and garlic. Cook 10 minutes, stirring, until tender. Stir in broth, cream, mustard, rosemary, and ¼ tsp salt. Bring to a boil; reduce heat, and simmer 10 minutes.
- Pour sauce over pork; bake 20 to 25 minutes or until a meat thermometer inserted in pork reads 145°F. Let stand 3 minutes before slicing.

- 1 (16-oz) pkg frozen green beans
- 2 Tbsp butter, melted
- 1 Tbsp Dijon mustard
- ¼ tsp salt
Side Dish Instructions
- Microwave green beans according to package directions.
- Combine butter and mustard in a bowl. Add green beans; toss. Sprinkle with salt.
