Steak-Swiss Chard Wraps

Ingredients

  • 1 (¾-lb) flank steak
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 2 limes
  • 1½ Tbsp extra virgin olive oil
  • 1½ tsp honey
  • 1½ tsp finely chopped jalapeño pepper (see Note)
  • 2 Tbsp chopped fresh cilantro, divided
  • 1 cup thinly sliced red cabbage
  • ½ yellow bell pepper, sliced thinly
  • ½ cup crumbled feta cheese
  • 9 Swiss chard leaves, tough stems removed

Instructions

  1. Preheat grill or grill pan to medium-high heat. Sprinkle steak with ⅛ tsp each salt and pepper. Grill, covered, 5 to 8 minutes per side or until desired doneness. Let stand 10 minutes before slicing across the grain.
  2. Meanwhile, grate zest and squeeze juice from limes. Whisk together lime zest, lime juice, oil, honey, jalapeño, 1 Tbsp cilantro, and ⅛ tsp each salt and pepper. Drizzle over steak.
  3. Serve steak, cabbage, bell pepper, cheese, and 1 Tbsp cilantro in Swiss chard leaves.
