Grilled Jamaican Jerk Ribs

Ingredients

  • 1 lime
  • 2 Tbsp pineapple juice (or use orange juice)
  • 1½ Tbsp Caribbean jerk seasoning (such as McCormick)
  • 1 Tbsp canola oil 
  • 1½ tsp brown sugar 
  • ½ tsp minced ginger 
  • ½ tsp ground cumin
  • 1½ lb pork spareribs

Instructions

  1. Preheat grill to medium-high heat. Squeeze juice from lime. Mix together lime juice, pineapple juice, seasoning, oil, sugar, ginger, and cumin.
  2. Brush lime juice mixture over pork.
  3. Grill, covered, 25 minutes or until pork is done, turning every 10 minutes.

Side Dish Ingredients

  • 1 lime
  • 1 zucchini, chopped
  • 1 avocado, chopped
  • ½ cup chopped red bell pepper
  • ½ cup chopped pineapple
  • 2 Tbsp finely chopped red onion 
  • 1 Tbsp chopped fresh cilantro
  • ⅛ tsp salt
  • ⅛ tsp crushed red pepper

Side Dish Instructions

  1. Grate zest and squeeze juice from lime. Toss together all ingredients in a bowl.
