Grilled Jamaican Jerk Ribs
Pineapple, Avocado, and Zucchini TossIngredients
- 1 lime
- 2 Tbsp pineapple juice (or use orange juice)
- 1½ Tbsp Caribbean jerk seasoning (such as McCormick)
- 1 Tbsp canola oil
- 1½ tsp brown sugar
- ½ tsp minced ginger
- ½ tsp ground cumin
- 1½ lb pork spareribs
Instructions
- Preheat grill to medium-high heat. Squeeze juice from lime. Mix together lime juice, pineapple juice, seasoning, oil, sugar, ginger, and cumin.
- Brush lime juice mixture over pork.
- Grill, covered, 25 minutes or until pork is done, turning every 10 minutes.
Side Dish Ingredients
- 1 lime
- 1 zucchini, chopped
- 1 avocado, chopped
- ½ cup chopped red bell pepper
- ½ cup chopped pineapple
- 2 Tbsp finely chopped red onion
- 1 Tbsp chopped fresh cilantro
- ⅛ tsp salt
- ⅛ tsp crushed red pepper
Side Dish Instructions
- Grate zest and squeeze juice from lime. Toss together all ingredients in a bowl.
