Cowboy Chili

Ingredients

  • ¼ cup chopped onion
  • ½ lb lean ground beef
  • 2 tsp olive oil
  • 1 tsp chili powder
  • ½ tsp ground cumin
  • 1 (14.5-oz) can low-sodium beef broth
  • ½ (14.5-oz) can diced tomatoes with green chiles
  • 1 cup organic no-salt-added kidney beans, drained and rinsed
  • ½ cup frozen whole kernel corn
  • 1 green onion, sliced

Instructions

  1. Cook onion and beef in hot oil in a Dutch oven over medium-high heat 5 minutes or until onion is tender and beef is browned and crumbly; stir in chili powder and cumin. Cook 1 minute.
  2. Add broth and tomatoes. Bring to a boil; add beans and corn.
  3. Cook 5 minutes or until thoroughly heated; sprinkle with onion.

Side Dish Ingredients

  • ½ cup whole wheat flour
  • ¾ tsp baking powder
  • ½ tsp chopped fresh rosemary
  • ¼ tsp salt
  • 1½ Tbsp cold butter, cut into small pieces
  • ¼ cup milk

Side Dish Instructions

  1. Preheat oven to 400°F. Whisk together flour, baking powder, rosemary, and salt; cut in butter with a fork or pastry blender until mixture resembles coarse crumbs.
  2. Slowly add milk, stirring just until mixture holds together.
  3. Drop dough into 3 mounds on a baking sheet coated with cooking spray.
  4. Bake 12 to 15 minutes or until biscuits are browned.
