Cowboy Chili
Rosemary Drop BiscuitsIngredients
- ¼ cup chopped onion
- ½ lb lean ground beef
- 2 tsp olive oil
- 1 tsp chili powder
- ½ tsp ground cumin
- 1 (14.5-oz) can low-sodium beef broth
- ½ (14.5-oz) can diced tomatoes with green chiles
- 1 cup organic no-salt-added kidney beans, drained and rinsed
- ½ cup frozen whole kernel corn
- 1 green onion, sliced
Instructions
- Cook onion and beef in hot oil in a Dutch oven over medium-high heat 5 minutes or until onion is tender and beef is browned and crumbly; stir in chili powder and cumin. Cook 1 minute.
- Add broth and tomatoes. Bring to a boil; add beans and corn.
- Cook 5 minutes or until thoroughly heated; sprinkle with onion.
Side Dish Ingredients
- ½ cup whole wheat flour
- ¾ tsp baking powder
- ½ tsp chopped fresh rosemary
- ¼ tsp salt
- 1½ Tbsp cold butter, cut into small pieces
- ¼ cup milk
Side Dish Instructions
- Preheat oven to 400°F. Whisk together flour, baking powder, rosemary, and salt; cut in butter with a fork or pastry blender until mixture resembles coarse crumbs.
- Slowly add milk, stirring just until mixture holds together.
- Drop dough into 3 mounds on a baking sheet coated with cooking spray.
- Bake 12 to 15 minutes or until biscuits are browned.
