Chicken Farro Bowls
Ingredients
- 1¼ cups pearled farro (see Note)
- 1½ lb boneless, skinless chicken breasts
- ¼ tsp salt
- ¼ tsp pepper
- 1½ cups shredded carrots
- 1 (15-oz) can chickpeas, drained and rinsed
- ½ cup golden raisins
- ½ cup pistachios
- 6 green onions, sliced
- ¾ cup refrigerated lemon vinaigrette (such as Marzetti)
- ¼ cup chopped fresh flat-leaf parsley (optional)
Instructions
- Cook farro according to package directions.
- Meanwhile, sprinkle chicken with salt and pepper. Cook chicken in a large skillet coated with cooking spray 6 to 8 minutes or until done.
- Combine farro, chicken, carrots, chickpeas, raisins, nuts, and onions in a large bowl. Toss with vinaigrette. Sprinkle with parsley, if desired.
