Easy London Broil
Green Beans with Toasted Walnuts and Blue CheeseIngredients
- 2 lb top round London broil, trimmed
- ¾ tsp kosher salt
- ¾ tsp pepper
- ¼ cup butter, softened
Instructions
- Sprinkle meat on both sides with salt and pepper; rub softened butter over both sides of steak. Let meat stand at room temperature 30 minutes.
- Preheat oven to 425°F. Heat a large cast-iron skillet over medium-high heat. Add steak, and cook 4 minutes per side or until browned.
- Transfer skillet to oven, and bake 10 minutes. Let stand 10 minutes before thinly slicing across the grain.
Side Dish Ingredients
- 2 (10-oz) pkg green beans, trimmed
- ½ cup water
- ½ cup chopped walnuts
- 3 Tbsp olive oil
- 1 Tbsp red wine vinegar
- ½ tsp kosher salt
- ½ tsp garlic powder
- ⅓ cup crumbled blue cheese
Side Dish Instructions
- Bring green beans and water to a boil in a large skillet. Reduce heat to a simmer; cover and cook 3 minutes or until beans are just tender.
- Uncover and cook until all water has evaporated. Remove green beans from skillet; cool.
- Meanwhile, toast nuts in a small dry skillet over medium-low heat, stirring constantly, until lightly browned, about 2 to 4 minutes.
- Whisk together oil, vinegar, salt, and garlic powder in a large bowl. Add green beans, and toss. Sprinkle with nuts and cheese.
