Easy London Broil

Green Beans with Toasted Walnuts and Blue Cheese

Ingredients

  • 2 lb top round London broil, trimmed
  • ¾ tsp kosher salt
  • ¾ tsp pepper
  • ¼ cup butter, softened

Instructions

  1. Sprinkle meat on both sides with salt and pepper; rub softened butter over both sides of steak. Let meat stand at room temperature 30 minutes.
  2. Preheat oven to 425°F. Heat a large cast-iron skillet over medium-high heat. Add steak, and cook 4 minutes per side or until browned.
  3. Transfer skillet to oven, and bake 10 minutes. Let stand 10 minutes before thinly slicing across the grain.

Side Dish Ingredients

  • 2 (10-oz) pkg green beans, trimmed
  • ½ cup water
  • ½ cup chopped walnuts
  • 3 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • ½ tsp kosher salt
  • ½ tsp garlic powder
  • ⅓ cup crumbled blue cheese

Side Dish Instructions

  1. Bring green beans and water to a boil in a large skillet. Reduce heat to a simmer; cover and cook 3 minutes or until beans are just tender.
  2. Uncover and cook until all water has evaporated. Remove green beans from skillet; cool.
  3. Meanwhile, toast nuts in a small dry skillet over medium-low heat, stirring constantly, until lightly browned, about 2 to 4 minutes.
  4. Whisk together oil, vinegar, salt, and garlic powder in a large bowl. Add green beans, and toss. Sprinkle with nuts and cheese.
