Creole Turkey Sausage-Shrimp Ragu
Zucchini NoodlesIngredients
- ½ (13-oz) pkg smoked turkey sausage link, cut into ½-inch pieces
- 1 Tbsp vegetable oil
- ¾ cup finely chopped onion
- ½ cup chopped green bell pepper
- 2 cloves garlic, minced
- 2¼ tsp Creole seasoning
- ½ tsp dried thyme
- ½ lb peeled, medium-size raw shrimp, deveined
- ½ (14.5-oz) can fire-roasted diced tomatoes, drained (see Note)
Instructions
- Sauté sausage in hot oil in a large skillet over medium heat 5 minutes or until browned.
- Add onion, bell pepper, garlic, seasoning, and thyme; cook 8 minutes, stirring often. Add shrimp and tomatoes.
- Cook 5 minutes or until shrimp turn pink.

- 1 (14-oz) pkg zucchini spirals
- 1 clove garlic, minced
- ¼ tsp pepper
- 1 Tbsp olive oil
Side Dish Instructions
- Cook zucchini, garlic, and pepper in hot oil in a large nonstick skillet over medium-high heat 8 minutes or until zucchini is tender, adding 1 to 2 Tbsp water, if necessary, to avoid sticking.
