Creole Turkey Sausage-Shrimp Ragu

Ingredients

  • ½ (13-oz) pkg smoked turkey sausage link, cut into ½-inch pieces
  • 1 Tbsp vegetable oil
  • ¾ cup finely chopped onion 
  • ½ cup chopped green bell pepper
  • 2 cloves garlic, minced
  • 2¼ tsp Creole seasoning
  • ½ tsp dried thyme
  • ½ lb peeled, medium-size raw shrimp, deveined
  • ½ (14.5-oz) can fire-roasted diced tomatoes, drained (see Note)

Instructions

  1. Sauté sausage in hot oil in a large skillet over medium heat 5 minutes or until browned.
  2. Add onion, bell pepper, garlic, seasoning, and thyme; cook 8 minutes, stirring often. Add shrimp and tomatoes.
  3. Cook 5 minutes or until shrimp turn pink.

Side Dish Ingredients

  • 1 (14-oz) pkg zucchini spirals
  • 1 clove garlic, minced
  • ¼ tsp pepper
  • 1 Tbsp olive oil

Side Dish Instructions

  1. Cook zucchini, garlic, and pepper in hot oil in a large nonstick skillet over medium-high heat 8 minutes or until zucchini is tender, adding 1 to 2 Tbsp water, if necessary, to avoid sticking.
