Cowboy Skillet
Ingredients
- 1 Tbsp butter
- ½ (13-oz) pkg smoked turkey sausage link, cut to ½-inch slices
- ⅓ cup chopped onion
- 1 cup cauliflower crumbles
- ½ cup frozen corn kernels
- ½ red bell pepper, chopped
- ½ (15-oz) can low-sodium black beans, drained and rinsed
- 1½ tsp olive oil
- 3 large eggs
- ¼ cup mild salsa
- ¼ cup shredded Mexican blend cheese
- 1 green onion, chopped
Instructions
- Melt butter in a deep skillet over medium-high heat. Add sausage and onion; cook 5 minutes or until sausage is browned.
- Add cauliflower, corn, bell pepper, and beans. Cook 5 minutes, stirring occasionally, until cauliflower is tender.
- Meanwhile, heat oil in a large nonstick skillet over medium heat; crack 3 eggs into skillet. Cover and cook 3 minutes minutes or until whites are set and yolks are cooked to desired doneness.
- Serve eggs over sausage mixture with salsa, cheese, and green onion.
