Asian Chicken Noodle Soup

Ingredients

  • 1 red bell pepper, chopped
  • 1 bunch green onions, chopped
  • 1 (8-oz) pkg sliced mushrooms
  • 4 cloves garlic, minced
  • 1 Tbsp minced ginger
  • 2 Tbsp sesame oil
  • 6 cups low-sodium chicken broth
  • 1 Tbsp low-sodium soy sauce
  • 1 cup shredded rotisserie chicken
  • 8 oz whole-grain spaghetti

Instructions

  1. Cook bell pepper, white parts of green onion (reserving green tops), mushrooms, garlic, and ginger in hot oil in a Dutch oven over medium heat 5 minutes or until vegetables are tender.
  2. Stir in broth, soy sauce, and chicken; bring to a boil, reduce heat, and simmer 5 minutes.
  3. Add chicken and pasta; cook 10 to 12 minutes or until pasta is done. Stir in reserved green onion tops.
