Vegetarian Quesadillas
Ingredients
- ½ (10-oz) pkg frozen veggie pulled pork
- ½ (12-oz) pkg frozen corn kernels
- 1 onion, chopped
- ½ Tbsp olive oil
- ⅓ cup sour cream
- 1 green onion, sliced
- 3 burrito-size flour tortillas
- ¾ cup shredded Mexican-blend cheese
Instructions
- Microwave veggie pulled pork according to package directions.
- Meanwhile, cook corn and onion in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until lightly browned. Remove corn mixture from skillet.
- Stir together sour cream and onion; set aside.
- Top tortillas with corn mixture, vegetarian pulled pork, and cheese. Fold in half over filling.
- Cook quesadillas over medium-high heat 2 minutes per side or until browned and cheese is melted. Cut into wedges. Serve with green onion sour cream.
