Vegetarian Quesadillas

Ingredients

  • ½ (10-oz) pkg frozen veggie pulled pork
  • ½ (12-oz) pkg frozen corn kernels
  • 1 onion, chopped
  • ½ Tbsp olive oil
  • ⅓ cup sour cream
  • 1 green onion, sliced
  • 3 burrito-size flour tortillas
  • ¾ cup shredded Mexican-blend cheese

Instructions

  1. Microwave veggie pulled pork according to package directions.
  2. Meanwhile, cook corn and onion in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until lightly browned. Remove corn mixture from skillet.
  3. Stir together sour cream and onion; set aside.
  4. Top tortillas with corn mixture, vegetarian pulled pork, and cheese. Fold in half over filling.
  5. Cook quesadillas over medium-high heat 2 minutes per side or until browned and cheese is melted. Cut into wedges. Serve with green onion sour cream.
