Pepperoni Pizza Sliders
Tomato and Cucumber TossIngredients
- 1 (12-count) pkg slider buns (preferably whole wheat), split
- 1½ cups marinara sauce
- 1 (12-oz) pkg sliced bell pepper and onion medley
- 1 cup sliced mushrooms
- 1 cup shredded part-skim mozzarella cheese
- 1 (5-oz) pkg turkey pepperoni
- 2 Tbsp olive oil
- 2 Tbsp freshly grated Parmesan cheese
Instructions
- Preheat oven to 350°F. Generously coat a 13- x 9-inch baking dish with cooking spray. Arrange bottom buns in dish.
- Spread marinara sauce over buns in dish; top with bell pepper and onion medley, mushrooms, mozzarella, and pepperoni. Cover with bun tops, gently pressing down. Brush with oil, and cover with foil.
- Bake 15 minutes. Uncover, sprinkle with Parmesan, and bake 5 minutes longer or until cheese is melted and sliders are thoroughly heated.
Side Dish Ingredients
- 1 English cucumber, halved lengthwise and thinly sliced
- 1 pint grape tomatoes, halved
- 2 Tbsp red wine vinegar
- 1 Tbsp olive oil
- ½ tsp sugar
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Toss together all ingredients. Let stand 30 minutes.
