Pepperoni Pizza Sliders

Ingredients

  • 1 (12-count) pkg slider buns (preferably whole wheat), split
  • 1½ cups marinara sauce
  • 1 (12-oz) pkg sliced bell pepper and onion medley
  • 1 cup sliced mushrooms
  • 1 cup shredded part-skim mozzarella cheese
  • 1 (5-oz) pkg turkey pepperoni 
  • 2 Tbsp olive oil
  • 2 Tbsp freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 350°F. Generously coat a 13- x 9-inch baking dish with cooking spray. Arrange bottom buns in dish.
  2. Spread marinara sauce over buns in dish; top with bell pepper and onion medley, mushrooms, mozzarella, and pepperoni. Cover with bun tops, gently pressing down. Brush with oil, and cover with foil.
  3. Bake 15 minutes. Uncover, sprinkle with Parmesan, and bake 5 minutes longer or until cheese is melted and sliders are thoroughly heated.

Side Dish Ingredients

  • 1 English cucumber, halved lengthwise and thinly sliced
  • 1 pint grape tomatoes, halved
  • 2 Tbsp red wine vinegar
  • 1 Tbsp olive oil
  • ½ tsp sugar
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Toss together all ingredients. Let stand 30 minutes.
