Ingredients

  • 1½ lb chicken tenderloins
  • ½ tsp kosher salt, divided
  • ½ tsp pepper, divided
  • 1 Tbsp olive oil
  • 2 cups finely chopped celery
  • 1 cup shredded sharp Cheddar cheese
  • ½ cup sour cream
  • ½ cup olive-oil mayonnaise
  • 1 cup cream of chicken soup
  • ¾ cup French fried onions

Instructions

  1. Preheat oven to 375°F. Season chicken with ¼ tsp each salt and pepper. Cook chicken in hot oil in a large skillet over medium heat 4 minutes per side or until done. Cool; cut into bite-size pieces.
  2. Stir together chicken, celery, cheese, sour cream, mayonnaise, soup, and ¼ tsp each salt and pepper in a large bowl. Spoon mixture into a lightly greased 11- x 7-inch baking dish.
  3. Bake 35 minutes; sprinkle with onions.
  4. Bake 5 minutes longer or until bubbly around edges. Let stand 10 minutes before serving.

  • 1 (16-oz) pkg frozen broccoli florets
  • 3 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ¼ cup freshly grated Parmesan cheese

Side Dish Instructions

  1. Steam broccoli according to package directions. Drain and place in a bowl.
  2. Toss broccoli with oil, lemon juice, garlic, and salt. Sprinkle with cheese.
