Unforgettable Chicken Casserole
Lemon-Parmesan BroccoliIngredients
- 1½ lb chicken tenderloins
- ½ tsp kosher salt, divided
- ½ tsp pepper, divided
- 1 Tbsp olive oil
- 2 cups finely chopped celery
- 1 cup shredded sharp Cheddar cheese
- ½ cup sour cream
- ½ cup olive-oil mayonnaise
- 1 cup cream of chicken soup
- ¾ cup French fried onions
Instructions
- Preheat oven to 375°F. Season chicken with ¼ tsp each salt and pepper. Cook chicken in hot oil in a large skillet over medium heat 4 minutes per side or until done. Cool; cut into bite-size pieces.
- Stir together chicken, celery, cheese, sour cream, mayonnaise, soup, and ¼ tsp each salt and pepper in a large bowl. Spoon mixture into a lightly greased 11- x 7-inch baking dish.
- Bake 35 minutes; sprinkle with onions.
- Bake 5 minutes longer or until bubbly around edges. Let stand 10 minutes before serving.

- 1 (16-oz) pkg frozen broccoli florets
- 3 Tbsp olive oil
- 1 Tbsp lemon juice
- 2 cloves garlic, minced
- ½ tsp salt
- ¼ cup freshly grated Parmesan cheese
Side Dish Instructions
- Steam broccoli according to package directions. Drain and place in a bowl.
- Toss broccoli with oil, lemon juice, garlic, and salt. Sprinkle with cheese.
