Barbecue Chicken Tortilla Pizzas

Ingredients
- 1½ lb boneless, skinless chicken breasts
- 1 organic bell pepper (any color), thinly sliced
- 2 yellow squash, thinly sliced
- 1 Tbsp olive oil
- 6 burrito-size whole wheat tortillas
- ½ cup organic barbecue sauce
- 6 oz fresh mozzarella cheese, cut into very thin slices
Instructions
- Preheat oven to 400°F. Bake chicken 25 to 30 minutes or until done; cool slightly before shredding.
- Cook bell pepper and squash in hot oil in a large skillet over medium-high heat 5 minutes or until tender.
- Arrange tortillas on two baking sheets. Spread barbecue sauce on tortillas. Top each pizza with chicken, bell pepper, squash, and cheese.
- Bake 15 minutes or until cheese is melted.

- 1 onion, chopped
- 2 organic bell peppers (any color), chopped
- 2 Tbsp olive oil
- 1 (16-oz) pkg frozen corn, thawed
- ½ tsp salt
- ½ tsp pepper
- ¼ cup chopped fresh cilantro (or use flat-leaf parsley)
Side Dish Instructions
- Sauté onion and bell peppers in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until tender.
- Add corn, salt, and pepper; cook 5 minutes or until tender. Stir in cilantro before serving.
