Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 1 organic bell pepper (any color), thinly sliced
  • 2 yellow squash, thinly sliced
  • 1 Tbsp olive oil
  • 6 burrito-size whole wheat tortillas
  • ½ cup organic barbecue sauce
  • 6 oz fresh mozzarella cheese, cut into very thin slices

Instructions

  1. Preheat oven to 400°F. Bake chicken 25 to 30 minutes or until done; cool slightly before shredding.
  2. Cook bell pepper and squash in hot oil in a large skillet over medium-high heat 5 minutes or until tender.
  3. Arrange tortillas on two baking sheets. Spread barbecue sauce on tortillas. Top each pizza with chicken, bell pepper, squash, and cheese.
  4. Bake 15 minutes or until cheese is melted.

Side Dish Ingredients

  • 1 onion, chopped
  • 2 organic bell peppers (any color), chopped
  • 2 Tbsp olive oil
  • 1 (16-oz) pkg frozen corn, thawed
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup chopped fresh cilantro (or use flat-leaf parsley)

Side Dish Instructions

  1. Sauté onion and bell peppers in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until tender.
  2. Add corn, salt, and pepper; cook 5 minutes or until tender. Stir in cilantro before serving.
