Open-Faced Burgers with Balsamic Onions and Goat Cheese

Ingredients

  • 1 lb ground round
  • 1 small clove garlic, minced
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 large red onion, halved and thinly sliced
  • 1 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • 6 Bibb lettuce leaves
  • 1 oz goat cheese, crumbled

Instructions

  1. Combine beef, garlic, salt, and pepper using hands; shape into 3 patties.
  2. Cook patties in a grill pan or cast-iron skillet over medium-high heat 4 to 5 minutes per side or until no longer pink in centers.
  3. Meanwhile, cook onion in hot oil in a large skillet over medium heat 10 minutes or until tender, stirring occasionally.
  4. Stir in vinegar; cook 1 minute or until vinegar evaporates.
  5. Arrange lettuce in 3 stacks.
  6. Top with patties, onions, and cheese.

  • 2 carrots, cut into sticks
  • 1½ Tbsp olive oil
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Toss carrots with oil, garlic powder, salt, and pepper on a greased baking sheet.
  2. Bake 20 to 25 minutes, turning occasionally, or until carrots are tender.
