Goat Cheese Chicken Burgers

Ingredients

  • 1½ lb ground chicken
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 2 (4-oz) pkg goat cheese with honey, crumbled
  • 2 Tbsp olive oil
  • 6 hamburger buns (preferably whole wheat)
  • 3 Tbsp Dijon mustard
  • 2 cups arugula

Instructions

  1. Combine chicken, garlic powder, and oregano in a large bowl. Gently fold in cheese until incorporated. Shape into 6 patties.
  2. Cook patties in hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or until no longer pink. Serve patties on buns with mustard and arugula.

  • 5 clementines
  • 2 apples, chopped
  • 2 pears, chopped
  • 1 (4.3-oz) pkg pomegranate seeds (arils)

Side Dish Instructions

  1. Peel and section clementines. Combine clementines, apples, pears, and pomegranate seeds in a bowl; chill until ready to serve.
