Sheet Pan Pork Chops with Asparagus and Sweet Potatoes

Ingredients

  • 3 Tbsp olive oil, divided
  • 1½ Tbsp lemon juice
  • 2 tsp smoked paprika (or use regular)
  • ½ tsp dried thyme
  • 2 cloves garlic, minced
  • 3 (6-oz) boneless pork chops
  • ¾ lb sweet potatoes, peeled and cut into chunks
  • ½ tsp salt
  • ½ tsp pepper
  • ½ lb asparagus, trimmed

Instructions

  1. Preheat oven to 475°F. Combine 1½ Tbsp oil, lemon juice, paprika, thyme, and garlic.
  2. Combine pork and oil mixture. Place on a large rimmed baking sheet.
  3. Toss potatoes with 1½ Tbsp oil; arrange around pork. Season pork and potatoes with salt and pepper.
  4. Bake 15 minutes; add asparagus to pan, and bake 10 minutes longer or until pork is done and vegetables are tender, turning pork once during baking.
