Pan-Seared Salmon Sandwiches

Ingredients

  • 6 (6-oz) salmon fillets
  • 2 Tbsp butter
  • 2 Tbsp olive oil
  • ½ cup mayonnaise
  • 2 Tbsp whole-grain Dijon mustard
  • 1 Tbsp minced fresh dill
  • 2 tsp lemon zest
  • 6 hamburger buns, split and toasted
  • 3 cups arugula

Instructions

  1. Lightly season salmon with salt and pepper. Melt butter with oil in a large nonstick skillet over medium-high heat. Add salmon, and cook 4 to 5 minutes per side to desired doneness.
  2. Meanwhile, stir together mayonnaise, Dijon, dill, and lemon zest; spread over cut sides of buns.
  3. Serve salmon on buns with arugula.

  • 1 (9-oz) pkg sweet potato chips
  • 1 lb seedless red grapes

Side Dish Instructions

  1. Serve chips and grapes with sandwiches.
