Pan-Seared Salmon Sandwiches
Sweet Potato Chips and GrapesIngredients
- 6 (6-oz) salmon fillets
- 2 Tbsp butter
- 2 Tbsp olive oil
- ½ cup mayonnaise
- 2 Tbsp whole-grain Dijon mustard
- 1 Tbsp minced fresh dill
- 2 tsp lemon zest
- 6 hamburger buns, split and toasted
- 3 cups arugula
Instructions
- Lightly season salmon with salt and pepper. Melt butter with oil in a large nonstick skillet over medium-high heat. Add salmon, and cook 4 to 5 minutes per side to desired doneness.
- Meanwhile, stir together mayonnaise, Dijon, dill, and lemon zest; spread over cut sides of buns.
- Serve salmon on buns with arugula.

- 1 lb seedless red grapes
