Oh So Good Mac 'n Cheese

Ingredients

  • 2 cups elbow macaroni
  • 2½ cups shredded Cheddar cheese, divided
  • 2 cups small curd cottage cheese
  • 1 (8-oz) carton sour cream
  • 1 egg, beaten
  • 1 tsp salt
  • ½ tsp pepper
  • 2 Tbsp butter, cut into small pieces

Instructions

  1. Preheat oven to 350°F. Cook macaroni according to package directions.
  2. Stir together macaroni, 2 cups Cheddar, cottage cheese, sour cream, egg, salt, and pepper in a large bowl. Spoon into a lightly greased baking dish; dot with butter. Sprinkle with ½ cup cheese.
  3. Bake, uncovered, 45 minutes.
