Crunchy Soft Tacos

Ingredients

  • ½ lb ground beef
  • ½ (12.5-oz) pkg soft taco dinner kit
  • ¼ cup water
  • ½ (12-count) pkg hard taco shells
  • 1 (16-oz) can refried beans
  • 1 cup shredded Cheddar cheese
  • ½ (8-oz) pkg shredded lettuce
  • 1 tomato, chopped

Instructions

  1. Cook beef in a large skillet over medium heat until browned and crumbly; drain and return to skillet.
  2. Add half of taco seasoning packet from kit and water. Bring to a boil, reduce heat, and simmer until thickened.
  3. Meanwhile, heat desired number of taco shells according to package directions. Heat beans according to package directions.
  4. Spread beans in a thin layer over tortillas. Wrap each tortilla around 1 crunchy taco shell.
  5. Fill shells with meat mixture; top with cheese, lettuce, and tomato.

Side Dish Ingredients

  • 1 (6.4-oz) box Mexican rice mix
  • ½ (16-oz) container guacamole
  • ½ (10-oz) pkg tortilla chips

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Serve guacamole with chips.
