Cajun Succotash

Ingredients
- 1½ cups brown basmati rice, rinsed
- 1 (28-oz) can BPA-free organic no-salt-added diced tomatoes
- 2 (15-oz) cans BPA-free red beans, drained and rinsed
- 1 (16-oz) pkg frozen cut okra
- 2 cups organic vegetable broth
- 2 cups frozen corn kernels
- 1 onion, chopped
- 3 cloves garlic, minced
- 1½ tsp Cajun seasoning
Instructions
- Cook rice according to package directions.
- Combine tomatoes, beans, okra, broth, corn, onion, garlic, and Cajun seasoning in a Dutch oven. Cover and bring tomato mixture to a boil. Reduce heat, and simmer, uncovered, 15 minutes.
- Serve succotash over rice.
Side Dish Ingredients
- 1 onion, sliced
- 3 large yellow squash, sliced (see Note)
- ¼ tsp salt
- ½ tsp pepper
- 3 Tbsp olive oil
Side Dish Instructions
- Sauté onion, squash, salt, and pepper in hot oil in a large skillet over medium-high heat 10 to 12 minutes or until tender, stirring occasionally.
