Chicken Slaw

Ingredients

  • 1½ lb Napa cabbage, shredded
  • 3 cups shredded rotisserie chicken
  • 1 red bell pepper, thinly sliced
  • 6 green onions, chopped
  • 6 Tbsp low-sodium soy sauce
  • 2 Tbsp white vinegar
  • 2 Tbsp creamy peanut butter
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 6 Tbsp canola oil
  • 2 Tbsp sesame oil

Instructions

  1. Toss together cabbage, chicken, bell pepper, and onions in a large bowl.
  2. Stir together soy sauce, vinegar, peanut butter, garlic, and ginger until well blended. Slowly whisk in canola oil and sesame oil. Drizzle over salad; toss.
  3. Chill until ready to serve.
