Chicken Slaw
Ingredients
- 1½ lb Napa cabbage, shredded
- 3 cups shredded rotisserie chicken
- 1 red bell pepper, thinly sliced
- 6 green onions, chopped
- 6 Tbsp low-sodium soy sauce
- 2 Tbsp white vinegar
- 2 Tbsp creamy peanut butter
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 6 Tbsp canola oil
- 2 Tbsp sesame oil
Instructions
- Toss together cabbage, chicken, bell pepper, and onions in a large bowl.
- Stir together soy sauce, vinegar, peanut butter, garlic, and ginger until well blended. Slowly whisk in canola oil and sesame oil. Drizzle over salad; toss.
- Chill until ready to serve.
