Ingredients
- 3 cups chopped rotisserie chicken
- 1 cup grape tomatoes, chopped
- 1 cup frozen corn kernels, thawed
- ½ red onion, diced
- ½ cup plain Greek yogurt
- ¼ cup sour cream
- 1 Tbsp lime juice
- 2 tsp ground cumin
- 1 (3-count) pkg hearts of romaine, chopped
- 2 avocados, sliced
- 2 Tbsp chopped fresh cilantro
Instructions
- Combine chicken, tomatoes, corn, and onion in a large bowl.
- Whisk together yogurt, sour cream, lime juice, and cumin. Toss with chicken mixture. Cover and chill 1 hour, if desired.
- Divide romaine among 6 plates; top with chicken salad, avocado, and cilantro.
