Vegetarian Tex-Mex Migas

Ingredients

  • 2 almond flour tortillas, cut into strips 
  • 1 Tbsp olive oil, divided
  • ½ bell pepper, any color, chopped
  • ¼ cup chopped green onions, divided
  • 6 large eggs, lightly beaten
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup shredded Cheddar cheese
  • 6 Tbsp refrigerated fresh salsa

Instructions

  1. Cook tortilla strips in ½ Tbsp hot oil in a large skillet over medium heat 4 to 5 minutes or until crisp; remove from skillet.
  2. Add ½ Tbsp oil, bell pepper, and 2 Tbsp green onions; cook 2 minutes or until tender.
  3. Add eggs, salt, and pepper; cook 2 minutes or until eggs are almost set, stirring frequently.
  4. Add cheese and salsa; cook 2 minutes or until cheese melts and eggs are set. Stir in tortilla strips. Sprinkle with 2 Tbsp green onions before serving.
