Vegetarian Tex-Mex Migas
Ingredients
- 2 almond flour tortillas, cut into strips
- 1 Tbsp olive oil, divided
- ½ bell pepper, any color, chopped
- ¼ cup chopped green onions, divided
- 6 large eggs, lightly beaten
- ¼ tsp salt
- ¼ tsp pepper
- ½ cup shredded Cheddar cheese
- 6 Tbsp refrigerated fresh salsa
Instructions
- Cook tortilla strips in ½ Tbsp hot oil in a large skillet over medium heat 4 to 5 minutes or until crisp; remove from skillet.
- Add ½ Tbsp oil, bell pepper, and 2 Tbsp green onions; cook 2 minutes or until tender.
- Add eggs, salt, and pepper; cook 2 minutes or until eggs are almost set, stirring frequently.
- Add cheese and salsa; cook 2 minutes or until cheese melts and eggs are set. Stir in tortilla strips. Sprinkle with 2 Tbsp green onions before serving.
