Ingredients
- 1 lb lean ground beef
- 1 small onion, chopped
- 1 red bell pepper, chopped
- 1 Tbsp chili powder
- 1 tsp ground cumin
- ⅛ tsp salt
- 1 (32-oz) carton gluten-free beef broth
- 2 (10-oz) cans diced tomatoes with green chiles
- 1 (15-oz) can pinto beans, drained and rinsed
- 2 Tbsp lime juice
- ¾ cup shredded Cheddar cheese
- ½ cup chopped pickled jalapeños
Instructions
- Cook beef, onion, bell pepper, chili powder, cumin, and salt in a large pot over medium-high heat 6 to 8 minutes until beef is browned and crumbly.
- Stir in broth, tomatoes, and beans. Bring to boil. Cover, reduce heat and simmer 20 minutes until the vegetables are tender.
- Stir in lime juice. Top each serving with cheese and jalapeños.
