Ingredients

  • 1 lb lean ground beef
  • 1 small onion, chopped
  • 1 red bell pepper, chopped
  • 1 Tbsp chili powder
  • 1 tsp ground cumin
  • ⅛ tsp salt
  • 1 (32-oz) carton gluten-free beef broth
  • 2 (10-oz) cans diced tomatoes with green chiles
  • 1 (15-oz) can pinto beans, drained and rinsed
  • 2 Tbsp lime juice
  • ¾ cup shredded Cheddar cheese
  • ½ cup chopped pickled jalapeños

Instructions

  1. Cook beef, onion, bell pepper, chili powder, cumin, and salt in a large pot over medium-high heat 6 to 8 minutes until beef is browned and crumbly.
  2. Stir in broth, tomatoes, and beans. Bring to boil. Cover, reduce heat and simmer 20 minutes until the vegetables are tender.
  3. Stir in lime juice. Top each serving with cheese and jalapeños.
