Roasted Potatoes and Green Beans with Bacon

Ingredients

  • 6 (6-oz) cod fillets
  • 1 large egg
  • 1 cup panko breadcrumbs
  • 2 Tbsp butter, melted
  • 2 Tbsp chopped fresh dill
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 425°F. Lightly season cod with salt and pepper. Lightly beat egg in a shallow dish.
  2. Stir together panko, melted butter, dill, and parsley in a separate shallow dish.
  3. Dip fish in egg, dredge in panko mixture, and place on a greased rimmed baking sheet.
  4. Bake 10 to 12 minutes, depending upon thickness of fish, until breadcrumbs are golden and fish flakes easily.

Side Dish Ingredients

  • 1 (24-oz) pkg honey gold potatoes, quartered
  • 1 onion, thinly sliced
  • 6 slices bacon, chopped
  • 1 (8-oz) pkg green beans

Side Dish Instructions

  1. Preheat oven to 425°F. Toss potatoes with onion on a rimmed baking sheet; spread in a single layer. Scatter bacon over mixture; season with salt and pepper.
  2. Bake 15 minutes. Add green beans; toss, and spread in a single layer. Bake 10 minutes or until potatoes are browned and tender.
