Italian Sausage-Tortellini Soup
Toasted Garlic-Oregano BreadIngredients
- 1 (16-oz) pkg ground Italian sausage
- 1 red bell pepper, chopped
- 1 cup chopped onion
- 1 Tbsp minced garlic
- ¼ tsp crushed red pepper
- 2 (32-oz) cartons chicken broth
- 2 (14.5-oz) cans diced tomatoes
- 2 zucchini, cut into half-moons
- 1 (25-oz) pkg frozen cheese tortellini
- ¼ cup chopped fresh basil
Instructions
- Cook sausage, bell pepper, onion, garlic, and red pepper in a large Dutch oven over medium-high heat until sausage is browned and crumbly; drain.
- Stir in broth, tomatoes, and zucchini; bring to a boil, reduce heat, and simmer.
- Add tortellini; cook 10 minutes or until tender. Stir in basil.

- ¼ cup butter, softened
- 1 tsp dried oregano
- 2 tsp minced garlic
- 1 (16-oz) loaf French bread, cut in half lengthwise
Side Dish Instructions
- Preheat broiler.
- Combine butter, oregano, and garlic in a small bowl; spread over cut sides of bread. Broil bread just until toasted; cut into slices.
