Italian Sausage-Tortellini Soup

Ingredients

  • 1 (16-oz) pkg ground Italian sausage
  • 1 red bell pepper, chopped
  • 1 cup chopped onion
  • 1 Tbsp minced garlic
  • ¼ tsp crushed red pepper
  • 2 (32-oz) cartons chicken broth
  • 2 (14.5-oz) cans diced tomatoes
  • 2 zucchini, cut into half-moons
  • 1 (25-oz) pkg frozen cheese tortellini
  • ¼ cup chopped fresh basil

Instructions

  1. Cook sausage, bell pepper, onion, garlic, and red pepper in a large Dutch oven over medium-high heat until sausage is browned and crumbly; drain.
  2. Stir in broth, tomatoes, and zucchini; bring to a boil, reduce heat, and simmer.
  3. Add tortellini; cook 10 minutes or until tender. Stir in basil.

Side Dish Ingredients

  • ¼ cup butter, softened
  • 1 tsp dried oregano 
  • 2 tsp minced garlic
  • 1 (16-oz) loaf French bread, cut in half lengthwise

Side Dish Instructions

  1. Preheat broiler.
  2. Combine butter, oregano, and garlic in a small bowl; spread over cut sides of bread. Broil bread just until toasted; cut into slices.
